Yogurt

Today I was grateful for my pina colada yogurt. You see, right after I got it out of the fridge I knocked my hand against something and accidentally dropped it on the floor. With the lid still firmly adhesed, it landed straight on its head. Though the force of the fall did cause a large chunk of the base of the container to break away (we actually never found it), I was still able to enjoy the majority of my pina colada yogurt from the bottom up without any worries.

MICHAEL MADE ME DINNER!!!! This is what he titled "This is Strada!!" It is actually called estrada, which is a cassarole/quiche dish.

Up close and personal with the Strada... It was absolutely delicious. I was SOOO impressed.

January 25 - February 2, 2010

February 2, 2010: I kidnapped my sis-in-law Savanna to go see When in Rome - we have both been dying to see it! After an exciting car ride she did end up walking through the whole mall looking this way (she is also wearing ear plugs and was plugging her nose and eating chocolate the whole time so that she would be as disoriented as possible). Dinner: Spinach Egg Risotto

February 1, 2010: Worked my first day at Covenant Employment Services and got a nice feel from the company. We mostly did paperwork today - Wednesday give me a better idea of what will really be happening. Dinner: Mexican bean and rice fry up (all organic - don't let the 'fry' worry you)

January 31, 2010: Spinach Artichoke Pizza kicks off my goal of cooking 5 of the 7 nights of this upcoming week and the next!!

January 29, 2010: Michael and Nick pulling out the love sac for a fun movie date night!

January 24: This year we had a Heartfelt Christmas : A Christmas where the only mula you can spend on your gifts is for supplies on something that you make for the recipient. I have been really worried lately about how to organize our stuff in our little apartment. This was my gift from Michael. He made me a shelf that sits on the lip of our extra bathtub so that we have a flat surface in there and can use it for storage. Isn't he amazing!?

January 23: Nick got home from his mission on January 8th, so we waited until this weekend to have our family gift exchange. "Christmas" morning we all slept out under the Christmas tree in Michael and I's living room. So fun!

January 21, 2010: Tank has been pretty darn good about potty-ing in the right place but today we had a breakthrough! He had to go big potty and ran over to his potty pan, squatted (though you can't tell that well with his 2 inch legs), did his little trademark poopie spin, and here you have it. Beautiful:

January 20, 2010: When I left work on Wednesday I drove for about 50 feet before realizing that something felt very wrong. I pulled over and found myself to be driving on my rim on the back left side! After Michael came to my rescue we found a giant razor shoved in the tire! Here is the final result... you can decide on the proper amount of points that need to go on his man card.

January 19, 2010: After asking him for suggestions on food that we could make in mass for an upcoming event, my brother in law Jon decided to treat us to a world-class taste test. I had such an amazing time trying the tomatoes with mozzarella, apple, basil, and balsamic; roasted peppers; and asparagus with an orange glaze that I forgot to take a picture of the finished product. Even better documentation though... the producer. Here is Jon - the one that has single handedly walked my taste buds through a reason to make it to the celestial kingdom's buffet line:

January 17, 2010: Sweet Merrick made apple crisp as dessert for dinner tonight - she made me this personal little pan without chocolate so that I could enjoy it too!
